Gwyneth Paltrow Reveals She Uses Arugula as a Dairy Substitute

Gwyneth Paltrow uses diced arugula in turkey meatballs as a dairy-free alternative for added texture and flavor

The actress joined the Today show to chat about bringing her Goop Kitchen to New York, after opening 14 locations in California

Paltrow discussed expanding her Goop Kitchen, which offers allergen-free, gluten-free, and customizable meals, to a national audience

Gwyneth Paltrow has a surprising alternative to dairy in her cooking: meatballs.

“If you want to avoid dairy, one trick that I do is I dice up arugula and I put it in,” the Goop founder, 53, said during a cooking segment on the Today show Wednesday, May 27.

Paltrow, who was making turkey meatballs, added, “It sounds weird, but it kind of adds, like, a nice texture to it. And it's delicious.”

The actress joined the morning show to chat about bringing her Goop Kitchen to New York, after opening 14 locations in California, and the possibility of a national expansion.

“It's engineered for takeout and pickup and delivery only,” Paltrow explained to host Savannah Guthrie. “And when I say engineered, like, we engineered the packaging for that and every time we tasted something, we put it in the back of a car for 45 minutes to make sure that it arrived still tasting great.”

“I always say that food is the quickest way to feel better and and to look better. And of course, now every doctor in America will tell you that. And so we developed this really, really delicious, very healthy suite of items that are gluten-free and peanut-free, allergen-free. You can make them vegan, you can make them dairy-free.”

Guthrie then asked if it was true that the Goop team tested 200 different types of pepperoni.

“It is true,” Paltrow said. “I couldn't believe it. But you would be surprised, you know, there are certain pepperonis that have a lot of junk in them that, like, moms would not be happy feeding their kids, and our pizza has the cleanest, best pepperoni that you can get.”

When Guthrie asked whether she wanted to expand nationally, Paltrow replied, “I would love it to be.”

“The food is so good and what makes me so happy always is, you know, when you see sort of like Goop-skeptical, like, men. And then they love it and order it. I think it has very, very broad appeal, because it's just so delicious.”

During the same interview, Paltrow said the experience of seeing her kids go off into the world was “really hard.”

Paltrow shares daughter Apple Martin, 22, and son Moses Martin, 20, with her ex-husband, Coldplay frontman Chris Martin.

“I really struggled when they all went and then I thought, ‘Okay, I'm all good,' ” she said. “And then in September again, I kind of fell off a cliff for the second time. But now I feel like, it's what you want to happen. It's what you hope will happen that they will go off to their next phase of life and find their people.”
